Monday Night Dinner. Grilled Steak with a Tomato, Red Bell Pepper, and Yam leaf mixture with a side of Yellow Squash.
Grilled Steak: Season the steak with salt, fresh ground pepper, red chili powder and garlic powder. Place on a hot foreman grill cook on both sides for 5 minutes, set aside and cover with foil for 10 minutes.
Tomato mixture: In a hot pan drizzled with olive oil, saute 4-5 stalks of chopped scallions for 1 minute. Then add 2 large tomatoes [chopped]. After a minute, add red bell pepper [chopped]. Add chinese cooking wine, mirin, garlic powder, black pepper, salt, and red chili powder. After 5-6 minutes, yam leaves and 1/3 cup of parmesan cheese.
Yellow Squash: In a hot pan drizzled with olive oil, saute 5-6 cloves of garlic [chopped] for a few seconds before adding the yellow squash [chopped]. Add a pinch of salt and cook for 4-5 minutes.
Place a disk of rice in the center of the dish, slice the steak into thin slices, place on dish, topped off with the tomato red pepper mixture with a side of squash. And serve.
