Food Adventuring in the City with Friends. Prosperity Dumplings. Part 2.
Prosperity Dumpling also has pretty great sesame pancakes stuffed with lightly pickled shredded carrots, cilantro, and protein of your choice like Peking duck. The flavors remind me of a chinese modified vietnamese sandwich. The pancake itself has a super crisp exterior with a soft bread inside. You have to eat it fast or it’ll go bad on you, like most greasy fried foods. But at $1.25 for that big portion, it’s well worth it.

How to Make… Homemade dumplings!

INGREDIENTS: (feeds 8-10 people)

1 pound ground pork (can also use ground chicken)

1 head of Taiwanese cabbage (available at Asian supermarkets)

2 packs of dumpling skins (available in Asian supermarkets)

Sesame oil

fish sauce

1 small bowl of water

chili oil (optional)

soy sauce (optional)

1 small bundle of cilantro (optional)

1 stalk of celery (optional)

2 stalks of scallion (optional)

DIRECTIONS:

1) Finely chop the taiwanese cabbage and place into a large bowl.

2) Combine the ground pork, 1-2 tablespoons of sesame oil, 2 tablespoons of fish sauce, and salt and pepper to taste. Mix everything until everything is evenly combined.

3) Make the dumplings by spooning small portions of the mixture onto the dumpling skin (don’t put too much that you cannot seal the dumpling). Then use spread a dab of water around the edges of the dumpling skin to help seal the dumpling. Firmly seal the edges together with your fingers. If you want to save some dumplings for later, sprinkle some flour over a flat tray, place the dumplings on the tray (don’t overcrowd them) and pop them in the freezer until frozen. Then place the dumplings into bags)

4) In a pot of boiling water, gently slide the dumplings into the water to cook for a few minutes. The dumplings should be done when the skin of the dumplings is translucent.

And TADA! homemade dumplings! 

Optional: finely chop cilantro, celery and scallions and mix in a bowl. Place the mixture on top of the dumplings and drizzle soy sauce and hot chili oil over the dumplings.

Thursday afternoon snack. Gyoza dumplings stuffed with vegetables and chicken.
Heat up pan to a medium-medium high and wait a minute or two. When pan is well heated, splash a bit of olive oil in it and place frozen dumplings in pan. Let the dumplings sizzle for a couple of minutes. When the bottoms of the dumplings are slightly golden, pour just enough water to coat the bottom of the pan and cover dumplings with a lid for 3-5 minutes. After the dumplings have steamed, removed lid and continue to let the water evaporate and the bottoms of the dumplings to crisp up. This can take about 5 minutes.  Do not raise the temperature or let the pan get too hot, or the dumplings will burn. After the dumpling bottoms are golden brown and crispy, plate and serve with black vinegar. yuuuuum. =]
